Spiced Ground Cherries for Roast of Bison (America Buffalo)

Ground cherries
Brown sugar
Maple syrup
Apple cider
Natural source water
Piece of cinnamon stick
Cloves
Mutmeg
Jamaican pepper seeds (Peppercorns)

« Preparation »
  1. Envelope in a cheedecloth the following: the cinnamon, the cloves, the nutmeg and the pepper seeds.
  2. Place all the liquids and the brown sugar in a stainless steel casserole dish and let cook slowly 20 minutes approximately with the spices.
  3. Add the ground cherries and cook for 45 mins or until well-cooked.
  4. Pour into little, sterilized, glass jars and store to accompany a roast of bison or any other game meat.
